Description

These Pecan Pie Energy Bites come together in 10 minutes, making them a great healthy snack when you want something quick, easy, and delicious.


Ingredients

Units Scale
  • 100 g pecans (unsalted)
  • 200 g dates (pitted)
  • 1 tbsp warm water
  • 1/4 tsp salt
  • vanilla extract

Instructions

  1. Add the dates, pecans, vanilla extract, warm water, and salt to a food processor.
  2. Pulse until you have a sticky dough. When pressing it with your fingers, the dough should be sticky enough to stick together.

  3. Take a tablespoon of your dough and with your hand, roll it into even balls.
    Set the energy bites in the fridge for 30 minutes to 1 hour. Serve and enjoy!

Notes

Use pitted dates to save time. Pitted dates are dates that have had their pits or seeds removed.
This way, you do not have to waste time removing them.

Do not over-process the ingredients, as you want the dough to retain texture.

To make your energy bites even scoop out dough of the same size using a tablespoon.

Place your pecan pie energy bites in the fridge for 30 to 1 hour before serving.
